It’s almost time to set the holiday table again, and Chef Abbey Cochran is returning to the HKS Kitchen to show you how just a little creative reimagining results in sophisticated new interpretations of classic seasonal side dishes that impress and inspire. As the evening begins, Chef will slice up Caramelized Butternut Squash Cornbread with Salted Maple Five Spice Whipped Brown Butter, an appetizer with a rich, aromatic twist on a comforting staple that balances sweetness, warmth, and spice. Then, she’ll teach you how to make three unique side dishes in class. From indulgent Brussels and Black Garlic Gratin layered with deep umami flavor and smoky Tea-Glazed Carrots that highlight subtle complexity and natural sweetness to Crispy Salami Smashed Potatoes finished with fragrant Garlic Sage Butter for the perfect savory crunch, your taste buds and holiday tables will be in for a treat. Plus, you'll enjoy a curated Wine Pairing from The Wine Shop at Honeycomb. Ideal for home cooks and holiday hosts alike, come celebrate the heart of seasonal traditions while learning how to elevate them with unexpected ingredients and bold flavors that earn them a place on your holiday table. MEET THE CHEF:
Abbey Cochran is a food enthusiast who is a Missouri native with Carolina roots. College took her to North Carolina where she studied Restaurant, Food & Beverage Management. Upon falling in love with Charlotte, she resided in the area for nearly a decade while immersing herself in the hospitality and food & beverage industries. While culinary courses were helpful during college, she really got inspired and passionate when she worked as a spice merchant. Abbey has always had a love for food and how it brings people together, as food is a universal language that everyone understands. She takes that mindset into her current role at Onyx Coffee Lab, where she works as a specialty coffee roaster.
